What You Need:
Dough
- 3 cups all purpose flour
- 1 1/2 tsp yeast + 2 tbsp warm water + pinch of sugar
- 1 flax egg (1 tbsp flax meal + 3 tbsp warm water)
- 3/4 cup of nondairy milk (room temperature)
- 1/4 cup sugar
- 1/2 tsp sea salt
- 5 tbsp non-dairy shortening
- 1/2 tsp vanilla extract
Glaze
- 4 tbsp vegan butter
- 3/4 cup icing sugar (confectioner’s sugar)
- 1 tsp vanilla extract
- 2 tbsp maple syrup (optional) *hot water as needed to thin mixture
*Makes about 12 doughnuts
Instructions
1. Prepare yeast
Mix yeast and a pinch of sugar in water and let sit for 10 minutes, until yeast has a slight foam layer on top.
2. Make your flax egg
Mix flax meal into water and set aside to let thicken.
3. Add dry ingredients first
In a large mixing bowl, add half of flour, sugar, and salt.
4. Add liquid ingredients
Then add flax egg, yeast mixture, vegan shortening, cashew milk, and vanilla on top of the dry ingredients.
5. Mix and add remaining flour
Mix all ingredients together in a mixer on low for 2-3 minutes or by hand. Slowly add in remaining flour.
6. Knead for 5 minutes
Knead your mixture for 5 minutes until it forms a ball.
6. Let dough sit
Transfer dough to an oiled bowl, cover, and let sit for about an hour or until it doubles in size.
7. Roll out dough
Once dough has risen punch down and roll out onto a lightly floured surface until it is 1/2 inch in thickness.
8. Cut dough into doughnut shape
Use a cutter or large mug to cut into doughnut shapes and transfer to a lightly floured tray or pan. A small top will work for the middle hole.
9. Make doughnuts balls out of remaining dough
Roll the remaining dough into one long log, then cut into 1 inch pieces, forming each into balls.
10. Cover and let sit to rise
Cover the doughnuts and doughnut balls with wax paper or plastic wrap for 30 minutes.
11. Fry your doughnuts
Heat 1 inch of oil in a pot or pan on medium heat (or 350 degrees). You may need to adjust after cooking your first batch.
Fry for about 60 seconds on each side or until dough begins to float and becomes golden brown.
12. Drain for 5-10 minutes
Place your doughnuts on a rack or paper towel to drain excess oil for 5-10 minutes.
13. Heat ingredients for your glaze
In a small pan melt vegan butter on medium heat, then add sugar, vanilla extract, and maple syrup. Mix well.
14. Remove glaze before it boils
Remove the glaze mixture from heat before it comes to a full boil.
15. Add water to thin
Slowly add 1 tsp of hot water at a time to the glaze until it has a runny consistency.
16. Dip doughnuts
Using tongs, carefully dip doughnuts into the glaze on one or both sides.
17. Allow doughnuts to cool
Place doughnuts on cooling rake and allow to cool and drain excess glaze for 10-15 minutes.
18. Enjoy!
Enjoy your cool coconut yogurt as is or add maple syrup, vanilla extract, or fruit.
